Chicken Yakhni Pulao

Chicken Yakhni Pulao is a comforting Pakistani rice dish made with aromatic yakhni (broth), fragrant spices, and tender chicken.

Ingredients

  • 12 pieces of Chicken
  • 2 cups Basmati Rice
  • 2 medium Onion thin slices
  • 1/2 cup Olive Oil
  • 2 teaspoon Salt
  • 1 teaspoon Whole Cumin Seeds
  • 1/2 teaspoon Whole Black Pepper
  • 1/2 teaspoon Whole Cloves
  • 2 Cinnamon Sticks
  • 2 Bay Leaves
  • 2 Black Cardamoms

Instructions

  • Rinse and soak the rice in cold water.
  • In a large pot, add oil and onions. Fry onions until dark brown.
  • Once onions are browned, add the salt and all spices and ΒΌ cup water. Cook on medium heat for 2 minute.
  • Add the chicken and cook on high heat for 20 minutes, stirring occasionally.
  • Add 4 cups of cold water and bring to a boil.
  • Once the water is boiled, continue to cook on low heat for 15 minutes.
  • Add the rice and let the water boil on high heat until the water is almost evaporated.
  • Serve with Raita
