Ingredients
For the Beef
2lbbeefpreferably beef shoulder, cut into medium cubes
1packet Shan Bihari Kabab Masala
1/4cuppre-browned onioncrushed
1-2tablespoonsfresh raw papaya paste
1tablespoonginger-garlic paste
2tablespoonslemon juice
2-3tablespoonscooking oil

Instructions
Prepare the beef
Cut the beef into medium, evenly-sized cubes. Even pieces cook evenly on the grill.
Tenderize with papaya
Place the beef in a large bowl. Add the raw papaya paste and massage it in well. Don't skip this step, it's what gives Bihari Boti its melt-in-the-mouth texture.
Make the marinade
Add the Shan Bihari Kabab Masala, crushed onion, ginger-garlic paste, lemon juice, yogurt, and cooking oil. Mix well so every piece is coated. Cover and refrigerate, overnight for best flavor.
Thread the skewers
Thread the beef onto metal skewers, leaving a little space between pieces so the heat can move around each one. Cubes are much easier to handle here than the traditional thin strips.
Grill the Bihari Boti
Preheat your BBQ grill. Place the skewers on the hot grill and turn often for even cooking and a nice smoky char. Brush with a little oil if needed.
Serve
Serve hot with lemon wedges, sliced onions, green chutney, and naan or paratha
