Traditionally, the beef is cut into thin strips, not cubes. Those thin strips turn out wonderfully tender and juicy. But honestly, they can be tricky to handle and thread onto skewers. The classic recipe also calls for a blend of around 15 different spices, along with mustard oil, to create its distinctive flavor. I love the traditional way. But let’s be real, collecting so many individual spices isn’t easy when you’re living outside Pakistan.
That is where my practical twist comes in.
Today, Beef Bihari Boti has become a very popular way to enjoy this Pakistani BBQ favorite. I prefer using beef cubes because they are much easier to cut, marinate and handle on metal skewers. My preferred cut is beef shoulder, although the best choice can depend on what is available.
For my version, I use Shan Bihari Kabab Masala as a convenient shortcut instead of collecting all the individual spices. But there are two ingredients I don’t like to compromise on: fresh raw papaya to help tenderize the beef and 1/4 cup of crushed pre-browned onion for that deep, rich flavor in the marinade.
So this is my twist on a traditional favorite: the familiar Bihari flavor, a practical shortcut for today’s home cook, and beef cubes that are much easier to manage on the BBQ.

King of BBQ – Beef Bihari Boti
Ingredients
For the Beef
- 2 lb beef preferably beef shoulder, cut into medium cubes
- 1 packet Shan Bihari Kabab Masala
- 1/4 cup pre-browned onion crushed
- 1-2 tablespoons fresh raw papaya paste
- 1 tablespoon ginger-garlic paste
- 2 tablespoons lemon juice
- 2-3 tablespoons cooking oil
- 2 tablespoons yogurt
- Salt if needed, Shan Masala already has salt
For the BBQ
- Metal skewers
- Oil for brushing
- Lemon wedges for serving
- Sliced onions for serving
Instructions
Prepare the beef
- Cut the beef into medium, evenly-sized cubes. Even pieces cook evenly on the grill.
Tenderize with papaya
- Place the beef in a large bowl. Add the raw papaya paste and massage it in well. Don’t skip this step, it’s what gives Bihari Boti its melt-in-the-mouth texture.
Make the marinade
- Add the Shan Bihari Kabab Masala, crushed onion, ginger-garlic paste, lemon juice, yogurt, and cooking oil. Mix well so every piece is coated. Cover and refrigerate, overnight for best flavor.
Thread the skewers
- Thread the beef onto metal skewers, leaving a little space between pieces so the heat can move around each one. Cubes are much easier to handle here than the traditional thin strips.
Grill the Bihari Boti
- Preheat your BBQ grill. Place the skewers on the hot grill and turn often for even cooking and a nice smoky char. Brush with a little oil if needed.
Serve
- Serve hot with lemon wedges, sliced onions, green chutney, and naan or paratha
