A Little Background About Kababs
Kababs have been part of cooking traditions across Central Asia, Persia, the Middle East, and South Asia for generations. As cooking traditions traveled and blended, different regions and families developed their own versions using local ingredients, spices, and cooking methods. Kababs became an important part of South Asian cooking as well, and today we have so many varieties that each one can taste completely different. Reshami Kabab is known for its soft and silky texture, and the word resham means silk. What I love most is how these traditional flavors have continued into our modern kitchens. We can still enjoy the same love of flavorful grilled food while making it practical for our busy families today.
My Favorite Chicken Kabab for Family BBQs
Chicken Reshami Kabab – Soft, Juicy & Perfect for Your BBQ
Additionally, I like using a combination of chicken breast and thigh for these kababs, Chicken Reshami Kabab – Soft, Juicy & Perfect for Your BBQ. The breast provides texture, while the thigh adds moisture and keeps them juicy. I use minced chicken for this recipe. My food processor makes the wet ingredients quick and easy.
Moreover, I like grinding my own whole spices. Coriander and cumin, along with chili flakes, black pepper, and dried pomegranate (anardana), provide wonderful flavor. Furthermore, one ingredient I never skip is roasted besan, which helps bind the mixture and adds another layer of flavor.
The Secret to Soft, Reshami Kababs
One thing I have learned from making kababs for many years is that the mixture needs to be kneaded well. Don’t just mix everything together and immediately start making the kababs. Give the mixture some time and work it well with your hands. This helps develop the soft texture that gives Reshami Kabab its almost silky bite. I also like to chill the mixture before putting it onto the skewers. A chilled mixture is much easier to handle and stays together better while you are preparing the kababs for the grill.
Perfect for the Backyard Grill
Once the kababs are shaped and ready, they go straight onto the BBQ grill. This is exactly the kind of recipe I enjoy making for a family BBQ. The aroma of the chicken and spices cooking over the grill is wonderful, and the smoky flavor from the BBQ makes these kababs even more special. Serve them hot with naan, chutney, sliced onions, or a fresh salad. They are perfect for a relaxed backyard BBQ where everyone can enjoy food straight from the grill.
My Children’s Favorite Go-To Food
One of the biggest reasons I always keep these kababs in my freezer is because they are one of my children’s favorite go-to foods. When they are hungry and need something quick, they can take a cooked kabab from the freezer, let it defrost at room temperature, and warm it in the microwave. They often wrap the warm kabab in naan or pita bread with salad and their favorite sauces, and they are ready to eat. It is an easy meal they can take with them when they are busy or simply want something quick without waiting for a full dinner. As a mother, I love having something homemade in the freezer that my children can turn into a quick and satisfying meal themselves.
I Always Make Extra for the Freezer
Here is one of the reasons this recipe has become such a favorite in my kitchen. I usually make a large batch. We enjoy some fresh from the BBQ, but I also fully cook the extra kababs and freeze them for later. This has been such a helpful shortcut for my family. My children can take the frozen kababs out when they want them, let them defrost at room temperature, and then warm them in the microwave. Whether they turn them into a naan or pita wrap, enjoy them with a little salad and sauce, or simply eat them with chutney, having these ready in the freezer makes busy days much easier.
Perfect for Unexpected Guests and Evening Snacks
These kababs are also wonderful to have ready when unexpected guests arrive. There have been many times when having cooked kababs in the freezer has made things much easier for me. Instead of starting everything from the beginning, I already have something delicious prepared and ready to serve. I can simply take out the amount I need, let them defrost at room temperature, warm them, and serve them with naan, chutney, salad, or whatever I have available. And they are not only useful when I need to put together a meal. They also make a wonderful evening snack, especially when family or friends stop by for tea and you want to serve something warm and savory. For me, this is one of the biggest advantages of making a large batch.
Another Way I Use My Frozen Kababs
Sometimes I make a simple tomato gravy and turn the kababs into a quick dinner. I defrost the frozen kababs first and then gently place them into the tomato gravy. I keep the heat low and let them warm slowly, allowing the kababs to absorb some of the delicious gravy without breaking apart. With fresh naan, this makes such a comforting and easy meal. This is one of those little tricks that comes from cooking for a family for many years—you learn that a recipe can be much more useful when you think beyond the first meal.
The Simple Health Benefits Mothers Have Always Taught Us
Our mothers and grandmothers did not usually talk about food using complicated nutrition terms. They simply knew that a family needed wholesome food and a good variety on the table. Chicken provides protein, which our bodies need for growth and repair, while ingredients such as onion, fresh herbs, spices, and other simple additions bring flavor and variety to the meal. When I make these kababs at home, I also like knowing exactly what goes into them. Served with a fresh salad, vegetables, chutney, or another simple side, these kababs can be part of a balanced family meal. These are the simple lessons many of us learned from our mothers: feed your family good food, use good ingredients, and teach the next generation to appreciate homemade meals.

Chicken Reshami Kabab – BBQ
Ingredients
- 1 lb boneless chicken breast ground
- 1 lb boneless chicken thighs ground
- 3 tbsp salted butter softened to room temperature
- 2 medium onions
- 2- inch piece fresh ginger
- 3 green chilies seeds removed
- ½ cup fresh cilantro mostly stems removed
- 1 tbsp whole coriander seeds
- 1 tbsp whole cumin zeera
- 1 tbsp red chili flakes
- 1 tsp whole black pepper
- 1 tbsp dried pomegranate seeds
- 1 tbsp salt
- 2 tbsp besan gram flour
Instructions
Prepare the chicken:
- Ask your butcher to grind equal amounts of boneless chicken thigh and boneless chicken breast together.
Soften the butter:
- Bring the salted butter to room temperature so it mixes easily into the kabab mixture.
Process the fresh ingredients:
- Add the onions to a food processor and chop. Add the ginger, green chilies, and cilantro, and process everything together until finely chopped.
Grind the spices:
- Using a spice grinder, crush the whole coriander, cumin, red chili flakes, black pepper, and dried pomegranate seeds into a coarse spice mixture.
Roast the besan:
- In a small non-stick frying pan, dry-roast the besan over low to medium heat until lightly toasted and fragrant. Set aside to cool slightly.
Combine the mixture:
- In a large mixing bowl, add the ground chicken, chopped fresh ingredients, crushed spices, roasted besan, softened butter, and salt.
Knead well:
- Mix and knead everything together for about 10 minutes. This helps create a smooth, cohesive mixture that will be easier to shape and thread onto skewers.
Chill the Mixture:
- Cover the mixture and refrigerate for at least 3 hours. Chilling makes the mixture firmer and easier to thread onto skewers.
Prepare for Outdoor BBQ
- As we still have warm summer days, this is a great recipe to make outdoors on the BBQ. You can use either a charcoal BBQ or a propane gas grill. Metal skewers with wooden handles work especially well for these kababs and make them easier to handle on the grill.
Thread and BBQ:
- After chilling, shape the mixture around skewers to make approximately 6-inch kebabs.
Grill the Kababs
- Place the kababs on a hot, preheated BBQ. Grill for about 10 minutes on each side, or until the kababs are cooked through and nicely charred on the outside.

Such a delicious and tender kabab! I love how simple the ingredients are, yet the flavor is so rich. This one is definitely a family favorite.
